Really cool idea! You could take other fences (from full version 8) or nether fences.
I like it very much. So you could then also build in the desert eg an oasis. I wanted eh times, but I already have so many construction projects in my Survial game that I have not yet come to it.
For coconuts, you can get a head, which looks like this.
